Gap behind granite worktop - advice please

I'm sprucing up my kitchen - new tiles, floor, cabinet painting - and the tiler is here this week. A granite upstand was fitted over the old tiles as he's tried to take off around it the upstand has come with it and is firmly attached to the old tiles with a lot of silicon glue - he doesn't think they can be separated. I don't mind to live without the upstand, but in a couple of places the gap between the worktop and wall is about 1cm, so can't be covered by tiling - any diy advice on the best way to fill this gap? Pic of kitchen to help understand what has happened.
