Hidden ceiling lighting.

What type of lighting would you use above this dropped ceiling feature? The whole effect is great and overall layout and design is very good.

My vote is for a combination of hidden and concealed storage. Often a bespoke solution is the best option to suit the space and items to be on show/hidden. Another option is to have open storage but to highlight the items more suited to be displayed with lighting.

As the others have said, laying spotlights all over a ceiling just looks brash. They are best around the edges of the room, where the light bounces off walls and serves to give a nice glow, rather than an industrial glare. And I would absolutely advise keeping the central fitting on a separate circuit for a statement pendant - or at the least advise leaving the wiring for that there and hidden in the ceiling, for the potential for one in the future. Spots are massively overused - I have seen a load of period houses here in London made soulless by removing ceiling fittings and ambient lighting for a carpet of spotlights. spots are one aspect of a good lighting design, but should not light a room on their own - too harsh, too directional. It may be worth speaking to the electrician if you're not as keen on swagging. I know they can run a "pipe" through the ceiling void with the cabling in to put extra outlets and then just drill a hole from underneath the ceiling for the light but that is dependant on the joist direction etc though. That may not be feasible for what you want to do but may be worth asking the question anyway! If not, choose hooks that blend in with the ceiling? It will be easier to assess position this way too as you can just get the electrician to hold each one up for assessment before fixing! A general rule is that lights should be 1/2 - 2/3 of the tables width and normally hung 30-36 inches above the table. Given the double height I'd probably just start the lowest pendant c40-46 inches but I'm not sure on your total ceiling height and even though it's a feature you want to make sure the table is sufficiently lit!
