Kitchen ceiling, floor and splashback colour

We are having a new kitchen installed that is the same layout but the Wrens Cashmere gloss collection (grey/cashmere colour) with white worktops. I am struggling with which colour tiles to have. We quite like grey but not sure wether to go for a light shade or dark or maybe a beige stone colour? Also mirror metal, black or off white marble splashback? Lastly we hate how high the ceiling is any affordable tips to how we can alter this? please note we are having a hood above the island installed into the ceiling. The tiles will also follow through to the conservatory.
