Like the paving round the pool.

Could you please provide information about the pool pavers? How much a metre, what they're made from, are they set on concrete base, where they were purchased from and what they are named? Does the coping come in bullnose or rebated?

You've got a great spaced garden. I think you should pull the patio out evenly around the house and decide how much grassy area you want vs patio area. You have a lovely house that looks like light would spill out nicely to a patio in the evenings. If you wanted something different, you could always add in a pergola where the pool is - let vines grow over it and put a bench underneath.

I'd like to use bluestone pavers for our pool coping & surrounds, but I'm concerned it will get too hot underfoot, particularly because I have young kids. So now I'm on the hunt for pavers which have a similar uniform grey look but will be cooler. Does anyone have any experience with this or any suggestions?

A great blank canvas ! You could do allsorts. Build up the outside areas to make different height patios and sitting / eating areas? Build up the sides and have water features around the edges? Build on the limestone wall and make it look like a natural water feature? Have a 'hanging deck' area that slightly goes over the pool? I threw in the elephant water feature below for fun !

I would personally forget about painting the fence. Not because I like the orange, but because I'm lazy and I would rather invest my time and money in plants and soil (improvement of) and big planters or raised beds if you're going for that. If you plant climbers against the fence, most of it will be hidden anyway. And if your plants get larger, they will hide most of the fence too. I have solar powered lights in my garden and they give a lovely atmosphere at night. Mine are from Ikea. I have fairy lights along a fence and different kinds of lights that you can just put anywhere you like. Would be lovely to dot some lights around in your garden too.
