what would you do with this garden

we are embarking on a renovation extension job on a countryside bungalow. We have a lovely mature garden to the back however there are Dale trees along the back and to the side of the garden. They have grown really tall and block most of the sunlight coming into the garden. my husband would love to cut them all down whereas I think it would be nice to maybe cut them down partially and possibly make a feature of them. We will need to take some height off them. Has anyone had any similar experience or have any suggestions as to what we could do. As you can see from the photos there are appletrees to the right of the garden so we plan on keeping those
