Choosing paint colour for big refurb

Hi all
We are refurbing two floors of our Victorian semi and we will very soon have to pick paint colour for a hallway and 4 bedrooms ( including a master bedroom) and a bathroom.
We have spent a lot of time planning structural work and layout so we haven't spent much time planning colour schemes for each room. Our builders work so quickly that I know they will want paint colour soon. For ease I was just going to choose F&B All White which we have used in our kitchen but worried it will look a bit stark.
Does anyone have some good neutral colours combinations that are a bit more interesting than All White that still give me options when finally pulling together a room?
